3 c. whole wheat pastry flour
1 tsp. baking soda
3/4 tsp. salt
1 large egg
2 large egg whites
1 c. agave nectar
1 1/3 c. canola oil
2 Tbs. vanilla extract
1 Tbs. coconut extract
4 over-ripe mashed bananas
1 c. chopped pecans (or walnuts)
1/2 c. almond milk
- Preheat the oven to 350. Coat two loaf pans with cooking spray; set aside. In a large bowl, whisk together the flour, baking soda, and salt; set aside.
- In the bowl on an electric mixer fitted with the paddle attachment, beat the eggs, agave and oil on medium-low speed until combined. Beat in flour mixture. Add vanilla, coconut, bananas, nuts and milk and beat just to combine.
- Divide batter evenly between prepared pans. Bake until cake tester comes clean, 45 minutes (in my oven). ENJOY!!
